PHD in Greek History and archaeology, Taught Latin for over 30 years at high school, college and university.

Taught High school for 3 years Vancouver, College and University for 29 years in New Brunswick and Quebec as well as a graduate assistant at UBC.
I would simply tutor the student on line (FaceTime or Skype) by working through a good Latin text one chapter at a time. I would explain the language theory, work through a few examples from the exercises, and then ask the student to complete the exercises in the chapter and submit them to me via email. I would then return the assignment with corrections and go on to the next chapter. Grading would probably depend on the institutions to which the student is attached.
I am retired and so available almost any time in the week, though I prefer to keep weekends free and late evenings free>
